CIU participated in the 4th National Cooking Camp and Workshop

Assoc. Prof. Dr. Orhan Uludağ, the Director of the School of Tourism and Hotel Management, Cyprus International University (CIU), Esat Kastambollu, the Co-ordinator of the Department of Gastronomy and Kitchen Art Department and the CIU Students participated in the 4th National Cooking Camp and Workshop organised by Mengen Cookery School Graduates Association (ASOMDER). At the workshop held in Mengen 61 Lecturers from 56 universities contributed. In the first session of the workshop organized as four sessions, 81 problem areas related to the practice lessons were identified.

Assoc. Prof. Dr. Orhan Uludağ stated that lecturers, education programmes, physical conditions-infrastructure-budget and student topics were taken into consideration and a series of suggestions were prepared in teams and he also mentioned that a report was prepared. Assoc. Prof. Dr. Orhan Uludağ stated that six main problem areas related to physical conditions, infrastructure and budget were identified in the session and he pointed out that the establishment of the supplies and budget plan, the planning of training kitchens, infrastructure problems, supply of food products, technical equipment and expertise and occupational health – safety were identified.

Uludağ stated that programmes were opened to solve the problems and he said some suggestions were made such as preparing a budget, planning of application kitchens with the expert opinion, creation of barrier-free kitchen areas, cooperation with suppliers, establishment of application kitchens in the university, provision of laboratories / technicians for application areas and making porter examinations for students.

Uludağ stated that the report prepared by the committee is guiding and he pointed out that these suggestions will help to take one step further in the development of curriculum and in the development of applied education.
